Description

Blueberry Cottage Cheese Breakfast Bake is a protein-packed, creamy, and fruity breakfast dish, perfect for a nutritious start to the day.


Ingredients

– 1 cup cottage cheese  

– 2 large eggs  

– 1/4 cup honey or maple syrup  

– 1/2 cup milk  

– 1 tsp vanilla extract  

– 1/2 cup oat flour  

– 1/2 tsp baking powder  

– 1/2 tsp cinnamon  

– 1/4 tsp salt  

– 1 cup fresh or frozen blueberries  

– 1/4 cup chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.  

2. In a bowl, whisk together cottage cheese, eggs, honey, milk, and vanilla extract.  

3. Add oat flour, baking powder, cinnamon, and salt, then mix until combined.  

4. Gently fold in the blueberries.  

5. Pour the mixture into the baking dish and spread evenly.  

6. Sprinkle nuts on top if using.  

7. Bake for 30-35 minutes, or until golden and set in the center.  

8. Let it cool slightly before serving. Enjoy warm!  

Notes

– Serve with yogurt, fresh fruit, or a drizzle of honey.  

– You can use almond flour instead of oat flour for a lower-carb option.
