Ingredients
**For the Crust:**
– 1 1/2 cups graham cracker crumbs
– 1/4 cup melted butter
– 2 tbsp sugar
**For the Cheesecake Filling:**
– 16 oz cream cheese, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract
– 1/2 cup heavy cream
**For the Crème Brûlée Topping:**
– 1/4 cup granulated sugar
Instructions
1. Preheat oven to 325°F (163°C). Grease a springform pan.
2. Mix graham cracker crumbs, melted butter, and sugar, then press into the pan’s bottom.
3. In a bowl, beat cream cheese and sugar until smooth.
4. Add eggs one at a time, mixing well. Stir in vanilla and heavy cream.
5. Pour filling over crust and smooth the top.
6. Bake for 40-45 minutes until the center is slightly jiggly.
7. Turn off oven and let cheesecake cool inside for 1 hour.
8. Refrigerate for at least 4 hours or overnight.
9. Before serving, sprinkle sugar evenly on top and caramelize with a kitchen torch until golden brown.
10. Let the sugar set for a few minutes, then serve.
